Ingredients
2 tbsp. vegetable oil
1 stalk celery, chopped
1 small onion, chopped
1 tsp. yellow mustard
Salt and pepper to taste
Sprinkle chicken breasts with salt and pepper. Heat oil in a large skillet over medium heat. Add chicken breasts and cook, turning occasionally, 4 to 6 minutes or until meat thermometer inserted in the center registers 170°F. Cool.
Alternate: For a quick no-cook Chicken Salad: Substitute 1 (1 pound) package PERDUE® SHORT CUTS® Carved Chicken Breast, Grilled, for the 4 chicken breasts and omit Step 1 of recipe directions.
Cut chicken into bite-size pieces and place in a large bowl. Stir in celery, onion and mustard. Adjust seasoning with salt and pepper, to taste.
