Ingredients
2 tbsps. vegetable oil
2 tsps. Sazón seasoning
1/2 tsp. salt
1/4 tsp. black pepper
1 14.5 oz. bag stir-fry peppers and onions
1/2 cup sofrito
1/2 cup chicken broth
2 pkgs. Microwave Spanish rice
Preheat oven to 400 degrees F.
Coat the chicken with vegetable oil and season with Sazón seasoning, salt, and pepper.
In a medium oven-safe baking dish, add the stir-fry peppers and onions. Combine the sofrito and chicken broth and pour over peppers and onions.
Arrange the chicken on top of the peppers.
Place the baking dish in the oven and bake for 15 to 20 minutes, basting the chicken with the sauce halfway through cooking time. Chicken is done when a meat thermometer inserted in the center reaches 165 degrees F.
Serve Sofrito Chicken with a side of microwaveable Spanish rice.
