Ingredients
3 tbsp. olive oil
1 tbsp. poultry seasoning
1 lb. Brussels Sprouts, blanched for 5 minutes
1 large Sweet Potato, cubed and blanched for 5 minutes
1/4 cup fresh cranberries
1 can cranberry sauce
1/4 cup orange juice
2 tbsp. maple syrup
Weave
Weave PERDUE® FRESH CUTS™ Strips between the cranberries, then the brussel sprouts and sweet potato cubes onto a wooden skewer. Cut the brussels sprouts in half if too large for one bite. Brush with olive oil and season with poultry seasoning.
Grill
Heat a grill or grill pan over medium high heat. Grill the chicken skewers for 8 to 10 minutes until the brussels sprouts are tender and the chicken is cooked through. Chicken is done when a meat thermometer inserted in the center reaches 170°F.
Simmer
In a small sauce pan, heat the cranberry sauce, orange juice and maple syrup. Simmer for 5 minutes until flavors have combined and the sauce has thickened slightly.
Serve
Brush the warmed skewers with some of the sauce and serve with the rest of the sauce for dipping.
