1/8 tsp. black pepper

1 small onion

1 garlic clove

4 tbsp. all purpose flour

1/2 cup whole milk

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1 (8 oz.) bag fresh spinach

1 (12 oz.) can artichoke heart quarters, drained and chopped

Crusty bread or Sturdy Crackers for Serving

In a skillet, heat the butter over medium heat. Add the chicken and season with salt and black pepper. Sauté for 4 to 5 minutes until golden and cooked through. Chicken is done when a meat thermometer inserted in the center reaches 170°F. Transfer to a plate and set aside. To the same skillet add the onions and garlic. Sauté for 3 to 4 minutes. Add the flour and cook for 1 to 2 minutes more.
