Ingredients
1 pkg. PERDUE® PERFECT PORTIONS® Boneless Skinless Chicken Breast All Natural OR PERDUE® Thin Sliced Boneless Skinless Chicken Breasts
2 tbsp. olive oil
1/2 tsp. salt
1/4 tsp. black pepper
4 slices fresh mozzarella cheese
2 medium tomatoes, sliced into 8 slices
1/4 grated Parmesan cheese
1/4 cup panko bread crumbs
Saute
Heat the olive oil in a large skillet over medium high heat. Season the chicken with salt and black pepper and sauté for 2 to 3 minutes per side until chicken is golden and cooked through. Chicken is done when a meat thermometer inserted in the center reaches 170°F. Transfer chicken to a foil lined sheet tray when cooked.
