Ingredients
1 medium apple, seeded, divided
2 hard boiled eggs, divided
1/2 cup mayonnaise
1 tsp. apple cider vinegar
Ground black pepper to taste
Watercress or lettuce
1 can (8 oz.) sweet peas, drained
Step
Reserve a few apple slices for garnish and chop remaining apple and eggs.
Step
Combine chicken, apple, egg, mayo, vinegar and pepper in a large bowl until well blended.
Step
Serve on a bed of watercress or lettuce, sprinkle with peas and garnish with reserved apple and egg slices. Makes 6 cups.
