Ingredients
1 ripe mango, peeled and chopped
1/2 cup pineapple, chopped
1/4 cup red pepper, chopped
1/4 cup red onion, finely chopped
2 tbsp fresh cilantro, chopped
2 jalapenos, seeded and diced
2 tbsp lime juice
1/2 tsp salt
6 whole grain hamburger buns
1/2 cup feta cheese, crumbled
leaf lettuce
Stir the mango with the pineapple, red pepper, red onion, cilantro, jalapeno, lime juice and salt. Chill for 30 minutes before serving. Adjust salt to taste.
Prepare the turkey burgers according to package instructions. Arrange on buns with lettuce, salsa and feta.
Tips: Make this a low-carb option by serving over salad greens or with large lettuce leaves to act as wraps.
Salsa can be made up to 4 hours in advance.
Substitute papaya for the mango or pineapple.
