Ingredients

1 head romaine lettuce, washed and cut

1 cup pineapple, diced

1/2 cup red onion, sliced

2 cups cherry tomatoes

2 oz. bleu cheese dressing

Marinade:

1/4 cup jerk seasoning

2 tbsp. lime juice

1 tbsp. low sodium soy sauce

3 tbsp. olive oil

3 tbsp. molasses

Step

Mix together marinade ingredients in a large Ziploc bag. Add chicken breast tenders and evenly coat with marinade. Seal and refrigerate 15 to 20 minutes.

TIP

Add or reduce jerk seasoning for a hotter or milder dish.

Step

Place chicken breast tenders on grill and cook for 3 to 4 minutes per side. Or place chicken breast tenders on a non-stick sheet pan and bake at 375°F for 12 to 15 minutes or until an internal temperature of 170°F is reached.

Step

To make the salad, place cut romaine, pineapple, onion and tomatoes in a large bowl and toss with dressing until evenly coated. Top with jerk chicken to serve.
