Ingredients

8 slices turkey bacon

12 oz. ciabatta or focaccia bread, sliced into 1/2 -inch thick pieces

2 large tomatoes, cored and sliced

2 cups egg substitute

1 1/2 cups light cream

1 tsp. salt

pepper, to taste

2 cups 2% grated cheddar (divided)

Step

Preheat oven to 350°F.

Step

In a large skillet, cook bacon over medium heat. Drain on paper towels. Keeping a little bacon fat in pan, add chicken and cook until cooked through. Set aside.

Step

Cover the bottom of a 9 x 13 inch baking dish with ciabatta or fococcia slices. Cover bread with tomato slices and then bacon. Cut chicken into thin slices and lay over bacon. Sprinkle 1 cup cheese over chicken. Top with more focaccia.

Step

In large bowl, whisk together eggs, cream, salt and pepper. Slowly pour mixture over strata.

Step

Bake 30 minutes, remove from oven and top with remaining cheese and bake an additional 10 to 15 minutes until cheese has melted and strata feels firm to the touch. Cut into 8 squares and serve hot.
