Ingredients
No-stick olive oil spray
1/2 cup cornflake crumbs
1 pkg. (.75 oz.) Garlic & Herb Sald Dressing and Recipe Mix
pinch red hot pepper flakes
2 egg whites
Preheat oven to 400°F. Coat a sheet pan with no-stick olive oil spray.
In shallow dish, stir together cornflake crumbs, pepper and salad dressing mix.
In another a shallow dish, beat egg whites until frothy. Coat the chicken on both sides with egg white, then press chicken into crumb mix, coating both sides completely. Arrange chicken on sheet pan.
Bake 25 minutes, turning once, until meat thermometer inserted in center registers 170°F. Serve with roasted vegetables if desired.
