Ingredients
1 tbsp. olive oil
1 tbsp. fresh rosemary, chopped
1/2 tsp. salt
1/4 tsp. black pepper
1 cup white wine
1/2 cup fresh cranberries
3 springs fresh rosemary
1/4 cup honey
Saute'
Preheat your oven to 375°F. In an oven proof skillet, heat the olive oil over medium high heat. Add the chicken and season with rosemary, salt and pepper. Sauté for 2 to 3 minutes on one side.
Tuck
Turn the chicken over and add the white wine. Top the chicken with the cranberries. Tuck the rosemary sprigs into the skillet and place in the oven. Bake for about 20 minutes until chicken is done. Chicken is done when a meat thermometer inserted in the center reaches 170°F.
Whisk
Remove the skillet from the oven. Transfer chicken to a platter and cover to keep warm. Whisk the honey into the warm pan juices until melted.
Serve
Pour the skillet pan sauce over the chicken and serve.
